True. Notion has a plethora of features. But personally I felt many of them go unnoticed because Notion has become this huge workspace app now with infinite customisability.

Since you mentioned markdown, I feel it's much easier on Apple Notes actually with all the keyboard shortcuts. But again, there aren't many markdown options on Notes as there are on Notion and Obsidian.
